Cherry Lime Ice Cream

  • 1 pound cherries, washed, stemmed, sliced, and pitted.
  • 1 lime, zested
  • 2 limes, juiced
  • 1/2 cup sugar
  • 8 ounces mascarpone cheese
  • 1 cup whipping cream
  • 1/2 teaspoon vanilla extract

Put half the cherries, half the lime zest, and lime juice into a blender. Blend until smooth. Add sugar and cheese and blend again. Add cream and vanilla and blend until combined.

Place mixture in ice cream machine. When nearly finished, add the rest of the cherries. Place in freezer overnight.
